Ingredients

- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/4 cup parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 8 cups chicken broth
- 2 cups chopped kale
- 1 cup small pasta (like acini di pepe)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, parmesan cheese, egg, garlic powder, onion powder, and Italian seasoning. Mix well and form into small meatballs.
- In a large pot, heat olive oil over medium heat. Add the meatballs and cook until browned.
- Pour in chicken broth and bring to a simmer.
- Add the chopped kale and pasta, and cook until the pasta is al dente.
- Season with salt and pepper to taste. Serve hot.
Notes
- This soup can be made ahead of time and tastes even better the next day!
- Feel free to substitute any greens for kale.
