Ingredients

Scale
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/4 cup parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 8 cups chicken broth
  • 2 cups chopped kale
  • 1 cup small pasta (like acini di pepe)
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine ground beef, ground pork, breadcrumbs, parmesan cheese, egg, garlic powder, onion powder, and Italian seasoning. Mix well and form into small meatballs.
  2. In a large pot, heat olive oil over medium heat. Add the meatballs and cook until browned.
  3. Pour in chicken broth and bring to a simmer.
  4. Add the chopped kale and pasta, and cook until the pasta is al dente.
  5. Season with salt and pepper to taste. Serve hot.

Notes

  • This soup can be made ahead of time and tastes even better the next day!
