- 1 pound chicken thighs, boneless and skinless
- 1 tablespoon olive oil
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 2 garlic cloves minced
- 1 teaspoon grated fresh ginger
- 2 cups cooked rice
- 1/2 cup peas and carrots mixture
- 2 green onions chopped
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken and cook until browned on all sides.
- In a bowl, mix together bourbon, soy sauce, brown sugar, apple cider vinegar, garlic, and ginger.
- Pour the sauce over the chicken and let it simmer for 20 minutes until chicken is cooked through.
- In another pan, stir fry the rice with peas, carrots, and green onions.
- Serve the bourbon chicken over the fried rice.
Notes
- For extra flavor, marinate the chicken in the sauce for a few hours before cooking.
- Feel free to add other vegetables to the fried rice as desired.
