Description

Delight in the flavors of homemade bourbon chicken served with a side of fried rice, perfect for any meal.


Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 garlic cloves minced
  • 1 teaspoon grated fresh ginger
  • 2 cups cooked rice
  • 1/2 cup peas and carrots mixture
  • 2 green onions chopped


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken and cook until browned on all sides.
  3. In a bowl, mix together bourbon, soy sauce, brown sugar, apple cider vinegar, garlic, and ginger.
  4. Pour the sauce over the chicken and let it simmer for 20 minutes until chicken is cooked through.
  5. In another pan, stir fry the rice with peas, carrots, and green onions.
  6. Serve the bourbon chicken over the fried rice.

Notes

  • For extra flavor, marinate the chicken in the sauce for a few hours before cooking.
  • Feel free to add other vegetables to the fried rice as desired.
