Ingredients

  • 5 pounds beef leg
  • 2 cups breadcrumbs
  • 1 cup diced onions
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions, celery, and garlic until softened.
  3. In a bowl, combine sautéed vegetables, breadcrumbs, thyme, salt, and pepper.
  4. Make a pocket in the beef leg and fill it with the stuffing mixture.
  5. Secure the opening with kitchen twine.
  6. Place the stuffed beef leg in a roasting pan and pour beef broth over it.
  7. Cover with foil and roast for 2 hours. Remove the foil and roast for an additional 30 minutes, or until the meat is cooked to your liking.
  8. Let it rest for 15 minutes before slicing and serving.
