- 5 pounds beef leg
- 2 cups breadcrumbs
- 1 cup diced onions
- 1 cup diced celery
- 3 cloves garlic, minced
- 1 tablespoon dried thyme
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup beef broth
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté onions, celery, and garlic until softened.
- In a bowl, combine sautéed vegetables, breadcrumbs, thyme, salt, and pepper.
- Make a pocket in the beef leg and fill it with the stuffing mixture.
- Secure the opening with kitchen twine.
- Place the stuffed beef leg in a roasting pan and pour beef broth over it.
- Cover with foil and roast for 2 hours. Remove the foil and roast for an additional 30 minutes, or until the meat is cooked to your liking.
- Let it rest for 15 minutes before slicing and serving.
