- 4 cups kale, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups potatoes, diced

- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spoon.
- Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
- Stir in chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are cooked.
- Mix in the kale, salt, pepper, and thyme. Cook until the kale is wilted and tender.
- Adjust seasoning to taste and serve hot.
