Instructions
- In a large bowl, mix together the peanut butter, Greek yogurt, and honey until smooth.
- Add the rolled oats, whole wheat flour, vanilla extract, and baking soda. Stir until combined.
- Preheat your oven to 350°F (175°C).
- Drop tablespoon-sized portions of dough onto a baking sheet, leaving space for spreading.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before spreading Greek yogurt between two cookies to create a sandwich.

- For a sweeter cookie, feel free to add a bit more honey or some chocolate chips.
