- 6 large eggs
- 1 cup cooked ham, diced
- 1 cup broccoli florets
- 1 cup fresh spinach
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- ½ cup cooked turkey bacon, crumbled
- ¼ cup milk
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs and milk. Season with salt and black pepper.
- Heat olive oil in an oven-safe skillet over medium heat. Add the cooked ham, broccoli, spinach, and turkey bacon, sautéing for about 5 minutes.
- Pour the egg mixture over the sautéed vegetables and meats, stirring gently to combine.
- Sprinkle the cheddar and pepper jack cheeses on top.
- Cook for about 5 minutes, without stirring, until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the center is fully set.
- Remove from the oven, let it cool slightly, then slice and serve warm.
Notes
- For a little extra flavor, you can add some diced onions or bell peppers while sautéing the other ingredients.
- Feel free to substitute any vegetables you have on hand.
