- 1 whole leg of lamb
- 4 cloves of garlic, minced
- 2 lemons, juiced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine garlic, lemon juice, olive oil, rosemary, thyme, salt, and pepper to create a marinade.
- Rub the marinade all over the leg of lamb and let it marinate for at least 2 hours.
- Place the marinated lamb in a roasting pan and cover it with foil.
- Roast in the preheated oven for 2 to 2.5 hours, removing the foil for the last 30 minutes to allow for browning.
- Let the lamb rest for 15 minutes before carving and serving.

- For best flavor, marinate the lamb overnight.
