Ingredients

Scale
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup Greek yogurt (full-fat or low-fat)
  • 1/2 cucumber, finely grated and drained
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • Salt and pepper to taste
  • 4 pita breads or flatbreads
  • Tomato, sliced
  • Red onion, thinly sliced
  • Lettuce or spinach
  • Feta cheese (optional)
  • Fresh parsley (optional)

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
  2. Add chicken to the marinade, coat well, cover, and refrigerate for at least 30 minutes or overnight.
  3. To make tzatziki, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Stir and refrigerate.
  4. Preheat a grill pan or skillet over medium-high heat. Cook chicken for 5–7 minutes per side until fully cooked.
  5. Remove chicken from heat, let rest, then slice into strips.
  6. Warm pita breads using microwave, skillet, or oven.
  7. Assemble gyros by layering chicken, tzatziki, tomato, onion, lettuce, and any optional toppings in warm pita.
  8. Serve immediately while warm and fresh.

Notes

  • Marinate the chicken overnight for richer flavor.
  • Use plant-based yogurt for a dairy-free tzatziki.
  • Tzatziki can be made up to 2 days ahead.
  • Add olives or roasted red peppers for more variety.
