Ingredients

  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 68 tablespoons ice-cold water
  • Optional: 1 tablespoon sugar (for sweet pies)

Instructions

  1. In a large bowl, whisk together flour and salt.
  2. Add cold, cubed butter and cut it into the flour using a pastry cutter or fork until it resembles coarse crumbs.
  3. Drizzle in ice-cold water, 1 tablespoon at a time, mixing gently until the dough starts to form.
  4. Form the dough into a ball, handling it as little as possible.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Roll out dough on a floured surface to about 1/8-inch thickness.
  7. Transfer dough to a pie pan, trim and crimp the edges.
  8. If blind baking, line the crust with parchment paper, add pie weights, and bake at 375°F for 15 minutes. Remove weights and bake for another 5–7 minutes until golden.

Notes

  • Always use very cold butter and water for best flakiness.
