- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla to the bowl. Mix until well combined.
- Gradually mix in boiling water until smooth.
- Pour batter into greased cake pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool before frosting with coconut-pecan frosting.

- Make sure to let the cake layers cool completely before frosting to prevent melting.
