Description

Ingredients

  • 10 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped baby spinach
  • 1/2 cup cooked bacon or sausage, crumbled (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk eggs, milk, salt, pepper, and garlic powder until frothy.
  3. Stir in cheese, bell peppers, spinach, and cooked meat if using.
  4. Divide the mixture evenly into the muffin cups (about 2/3 full).
  5. Bake for 18–20 minutes or until the tops are puffed and the centers are set.
  6. Cool for 5 minutes before removing from the pan. Serve warm or store for later.
