Description

This fluffy cottage cheese bread is a simple, high-protein, low-carb recipe that’s perfect for keto, gluten-free, or healthy baking. Made without yeast and ready in under an hour.


Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 6 large eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup almond flour (or coconut flour)
  • 1/4 cup oat fiber or protein powder (optional)
  • 1 teaspoon apple cider vinegar
  • Optional: garlic powder, rosemary, or Italian seasoning

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a blender or food processor, combine cottage cheese, eggs, almond flour, oat fiber or protein powder (if using), baking powder, salt, and vinegar. Blend until smooth.
  3. Pour batter into the prepared loaf pan and smooth the top.
  4. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • To make it savory, add chopped herbs or shredded cheese to the batter.
  • For a slightly sweet version, add vanilla extract, cinnamon, and a bit of honey.
