This fluffy cottage cheese bread is a simple, high-protein, low-carb recipe that’s perfect for keto, gluten-free, or healthy baking. Made without yeast and ready in under an hour.

- 1 cup cottage cheese (full-fat or low-fat)
- 6 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup almond flour (or coconut flour)
- 1/4 cup oat fiber or protein powder (optional)
- 1 teaspoon apple cider vinegar
- Optional: garlic powder, rosemary, or Italian seasoning
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a blender or food processor, combine cottage cheese, eggs, almond flour, oat fiber or protein powder (if using), baking powder, salt, and vinegar. Blend until smooth.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- To make it savory, add chopped herbs or shredded cheese to the batter.
- For a slightly sweet version, add vanilla extract, cinnamon, and a bit of honey.
- Can be stored in the refrigerator for up to 5 days or frozen in slices for later.
