Ingredients

  • 1 tbsp butter or olive oil
  • 3 large eggs
  • 1 (9-inch) unbaked pie crust
  • 1 lb cooked shrimp, peeled, deveined, and chopped
  • 1/2 cup diced onion
  • 1/2 cup diced red or green bell pepper
  • 3/4 cup half-and-half or heavy cream
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack or mozzarella cheese
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley or dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: dash of hot sauce or Old Bay seasoning

Instructions

  1. Preheat oven to 375°F (190°C). Prick pie crust and bake for 7–8 minutes; let cool.
  2. In a skillet, sauté garlic, onion, and bell pepper in butter for 3–4 minutes.
  3. In a bowl, whisk eggs, cream, lemon zest, lemon juice, salt, pepper, and optional seasoning.
  4. Stir in shrimp, sautéed veggies, cheeses, and herbs.
  5. Pour filling into pre-baked crust and smooth the top.
  6. Bake for 35–40 minutes until center is set and golden.
  7. Let rest 10 minutes before slicing. Serve warm or at room temperature.
