Description

Ingredients

  • 1 cup pistachio flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup heavy cream
  • 1/2 cup Meyer lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup confectioners’ sugar
  • 1 cup mirror glaze (prepared)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a bowl, combine the pistachio flour, all-purpose flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
  4. Gradually add the flour mixture and milk, mixing until smooth.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes. Let them cool.
  6. For the mousse, whip the heavy cream and fold in lemon juice and zest, sweetening with confectioners’ sugar.
  7. Once the cakes are cool, layer the mousse between the sponge cakes and top with the mirror glaze.
