- 1 cup pistachio flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup heavy cream
- 1/2 cup Meyer lemon juice
- 1 tablespoon lemon zest
- 1/2 cup confectioners’ sugar
- 1 cup mirror glaze (prepared)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a bowl, combine the pistachio flour, all-purpose flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract.
- Gradually add the flour mixture and milk, mixing until smooth.
- Divide the batter between the prepared pans and bake for 25-30 minutes. Let them cool.
- For the mousse, whip the heavy cream and fold in lemon juice and zest, sweetening with confectioners’ sugar.
- Once the cakes are cool, layer the mousse between the sponge cakes and top with the mirror glaze.
