- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 4 cups shredded zucchini
- 1 tsp salt
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (optional)
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 2 tbsp olive oil or melted butter
- Fresh parsley or chives, for garnish
Instructions
- Shred zucchini and toss with salt. Let sit for 10 minutes, then squeeze out moisture.
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- In a bowl, combine zucchini, onion, garlic, eggs, cheddar, Parmesan, pepper, and paprika. Mix well.
- Pour mixture into the prepared dish. If using breadcrumbs, mix with butter and sprinkle on top.
- Bake for 25–30 minutes or until golden and set. Let cool slightly before serving.
- Garnish with parsley or chives.
