- 1 can (14.5 oz) diced tomatoes
- 1 1/2 cups fish stock or chicken broth
- 1/2 cup white wine (optional)

Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, sauté for 3–4 minutes until softened.
- Add cubed potatoes and sliced carrots. Cook for another 5 minutes, stirring occasionally.
- Stir in diced tomatoes, fish stock, and white wine (if using). Combine well.
- Season with paprika, thyme, oregano, salt, and pepper. Bring to a gentle simmer and cook for 10–15 minutes until vegetables are tender.
- Add the fish chunks gently. Simmer for 5–7 minutes until fish is opaque and flakes easily.
- Remove from heat. Stir in fresh parsley and lemon juice for brightness.
