  • 1 1/2 cups fish stock or chicken broth
  • 1/2 cup white wine (optional)

  • Salt and pepper, to taste
  • 1/2 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, sauté for 3–4 minutes until softened.
  2. Add cubed potatoes and sliced carrots. Cook for another 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes, fish stock, and white wine (if using). Combine well.
  4. Season with paprika, thyme, oregano, salt, and pepper. Bring to a gentle simmer and cook for 10–15 minutes until vegetables are tender.
  5. Add the fish chunks gently. Simmer for 5–7 minutes until fish is opaque and flakes easily.
  6. Remove from heat. Stir in fresh parsley and lemon juice for brightness.
  7. Serve warm with optional crusty bread.
