- 2 ½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup chopped pecans or walnuts (optional)
Instructions
- Line a baking sheet with parchment paper or wax paper.
- In a medium saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
- Attach a candy thermometer and cook without stirring until the mixture reaches 250°F (hard-ball stage).
- While the syrup is cooking, beat egg whites with salt until stiff peaks form.
- Once the syrup reaches 250°F, remove from heat and slowly pour into the egg whites while beating on medium speed.
- Add vanilla extract and continue beating until the mixture thickens and becomes glossy (5–7 minutes).
- Fold in chopped nuts, if using.
- Quickly drop spoonfuls onto the prepared baking sheet and let set at room temperature for 2 hours or until firm.
- Store in an airtight container at room temperature for up to 1 week.
