  • 2 ½ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  • Line a baking sheet with parchment paper or wax paper.
  • In a medium saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
  • Attach a candy thermometer and cook without stirring until the mixture reaches 250°F (hard-ball stage).
  • While the syrup is cooking, beat egg whites with salt until stiff peaks form.
  • Once the syrup reaches 250°F, remove from heat and slowly pour into the egg whites while beating on medium speed.
  • Add vanilla extract and continue beating until the mixture thickens and becomes glossy (5–7 minutes).
  • Fold in chopped nuts, if using.
  • Quickly drop spoonfuls onto the prepared baking sheet and let set at room temperature for 2 hours or until firm.
  • Store in an airtight container at room temperature for up to 1 week.
