Ingredients

  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced

  • 1/4 cup roasted peanuts or sliced almonds (optional)
  • 1 tbsp sesame seeds (optional)
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp honey or maple syrup
  • 2 tsp toasted sesame oil
  • 1/4 cup olive or avocado oil
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • 1/2 tsp grated fresh ginger
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes or dash of Sriracha

Instructions

  1. In a small bowl or jar, whisk together all dressing ingredients until smooth.
  2. In a large bowl, combine green and red cabbage, carrots, bell pepper, green onions, and cilantro.
  3. Pour dressing over the slaw and toss to coat evenly.
  4. Top with nuts, sesame seeds, and herbs before serving.
