- 2 cups red cabbage, thinly sliced
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 3 green onions, sliced
- 1/4 cup chopped cilantro (optional)
- 1/4 cup roasted peanuts or sliced almonds (optional)
- 1 tbsp sesame seeds (optional)
- 3 tbsp rice vinegar
- 1 tbsp soy sauce (or tamari)
- 1 tbsp honey or maple syrup
- 2 tsp toasted sesame oil
- 1/4 cup olive or avocado oil
- 1 tbsp lime juice
- 1 garlic clove, minced
- 1/2 tsp grated fresh ginger
- Salt and pepper to taste
- Optional: pinch of red pepper flakes or dash of Sriracha
Instructions
- In a small bowl or jar, whisk together all dressing ingredients until smooth.
- In a large bowl, combine green and red cabbage, carrots, bell pepper, green onions, and cilantro.
- Pour dressing over the slaw and toss to coat evenly.
- Top with nuts, sesame seeds, and herbs before serving.
Notes
- Let slaw sit 15–20 minutes before serving to let flavors meld.
- Keep nuts separate until ready to serve for max crunch.
- Use pre-shredded cabbage mix for a shortcut.
