- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1/4 cup melted butter
- 1/2 tsp salt
- 4 slices turkey bacon
- 1 cup spinach
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
Instructions
- In a bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with butter.
- Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
- Cook for 2-3 minutes or until the edges start to lift, then flip and cook for another 1-2 minutes.
- Repeat with remaining batter.
- Meanwhile, cook the turkey bacon in a separate skillet until crispy, then chop into pieces.
- Fill each crepe with turkey bacon, spinach, bell peppers, and green onions.
- Fold the crepes and serve warm.
Notes
- For a sweeter version, you can add sugar to the batter.
