Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup melted butter
  • 1/2 tsp salt
  • 4 slices turkey bacon
  • 1 cup spinach
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions


Instructions

  1. In a bowl, whisk together the flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  3. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
  4. Cook for 2-3 minutes or until the edges start to lift, then flip and cook for another 1-2 minutes.
  5. Repeat with remaining batter.
  6. Meanwhile, cook the turkey bacon in a separate skillet until crispy, then chop into pieces.
  7. Fill each crepe with turkey bacon, spinach, bell peppers, and green onions.
  8. Fold the crepes and serve warm.

Notes

  • For a sweeter version, you can add sugar to the batter.
