  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 cup celery, diced
  • 3 garlic cloves, minced
  • 2 tsp Cajun seasoning
  • 1/2 tsp kosher salt
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 1/2 cups beef broth
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. In a large Dutch oven, cook the ground beef over medium heat until browned, about 4–5 minutes.
  2. Add the onion, bell pepper, celery, garlic, Cajun seasoning, and salt. Sauté for about 5 minutes, until vegetables soften.
  3. Stir in the uncooked rice and beef broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20–23 minutes until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit, covered, for 5–10 minutes. Fluff with a fork before serving.
  6. Garnish with green onions or parsley if desired.
