- 8 ounces pasta of your choice
- 6 hard-boiled eggs
- 4 slices turkey bacon
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup diced green onions
- 1/4 cup chopped celery
Instructions
- Cook pasta according to package instructions. Drain and set aside to cool.
- In a large bowl, chop hard-boiled eggs and set aside.
- In a skillet, cook the turkey bacon until crisp. Drain on paper towels and crumble.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, paprika, salt, and pepper.
- Combine the cooked pasta, chopped eggs, turkey bacon, green onions, and celery in the large bowl.
- Pour the dressing over the pasta mixture and toss until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a lighter version, you can use Greek yogurt instead of mayonnaise.
- Add more vegetables like bell peppers for extra crunch.
