- 8 ounces macaroni pasta
- 4 large eggs
- 4 slices turkey bacon
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup green onions, chopped
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- Cook the macaroni pasta according to package instructions, then drain and cool.
- Place eggs in a pot, cover with water, and boil for 10-12 minutes. Remove from heat, cool, and peel.
- In a large skillet, cook turkey bacon until crispy, then chop into pieces.
- In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, green onions, paprika, salt, and pepper.
- Add macaroni, chopped eggs, and turkey bacon to the mixing bowl and gently stir until combined.
- Refrigerate for at least 30 minutes before serving.
