Instructions
- Peel the hard-boiled eggs and roughly chop them into small pieces.
- In a medium mixing bowl, mash the chopped eggs using a fork until mostly smooth, leaving some small chunks for texture.
- Add the mayonnaise, Dijon mustard, vinegar or lemon juice, salt, black pepper, and ¼ teaspoon paprika to the bowl.
- Mix thoroughly until the ingredients are well combined and creamy.
- Taste the dip and adjust seasoning as needed, adding more salt, pepper, or mustard for flavor.
- Transfer the dip to a serving bowl.
- Sprinkle extra paprika on top for color and garnish with chopped chives or green onions if desired.
- Serve immediately with crackers, celery sticks, carrot sticks, or toasted bread for dipping.
- The dip can also be refrigerated for 1–2 days for flavors to meld further.
