Description

A light, fluffy, and cheesy crustless broccoli cheddar quiche that’s perfect for breakfast, brunch, or even a light dinner.


Ingredients

  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 cup milk (whole, 2%, or plant-based)
  • 1 1/2 cups broccoli florets (fresh or thawed frozen)
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional)
  • Optional: chopped parsley or chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Sauté onion in olive oil over medium heat until translucent (3-4 mins). Add garlic and cook for 30 seconds.
  3. Add broccoli and cook for 3–5 minutes until bright green and slightly tender.
  4. In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
  5. Spread broccoli mixture in dish, top with cheddar, and pour egg mixture over it.
  6. Bake 30–35 minutes or until the center is set and the top is golden.
  7. Cool 5–10 minutes before slicing. Garnish and serve.

Notes

  • Use Swiss or Gruyère cheese for variety.
  • Great make-ahead breakfast—store in fridge for 4 days.
