A light, fluffy, and cheesy crustless broccoli cheddar quiche that’s perfect for breakfast, brunch, or even a light dinner.

- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup milk (whole, 2%, or plant-based)
- 1 1/2 cups broccoli florets (fresh or thawed frozen)
- 1 tbsp olive oil or butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
- Optional: chopped parsley or chives for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- Sauté onion in olive oil over medium heat until translucent (3-4 mins). Add garlic and cook for 30 seconds.
- Add broccoli and cook for 3–5 minutes until bright green and slightly tender.
- In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
- Spread broccoli mixture in dish, top with cheddar, and pour egg mixture over it.
- Bake 30–35 minutes or until the center is set and the top is golden.
- Cool 5–10 minutes before slicing. Garnish and serve.
Notes
- Use Swiss or Gruyère cheese for variety.
- Great make-ahead breakfast—store in fridge for 4 days.
- Try in muffin tins for meal-prep mini quiches.
