- 1 can chickpeas, drained and rinsed
- 1 cup bell pepper, diced
- 1 cup cucumber, diced
- 1 cup carrots, shredded
- 1/2 cup red cabbage, shredded
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/4 cup peanuts, chopped
- 3 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon ginger, grated
Instructions
- In a large bowl, combine the chickpeas, bell pepper, cucumber, carrots, red cabbage, cilantro, green onions, and peanuts.
- In a small bowl, whisk together lime juice, soy sauce, sesame oil, honey, and ginger.
- Pour the dressing over the salad and toss to combine.
- Chill for 30 minutes before serving to enhance flavors.
