Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup carrots, shredded
  • 1/2 cup red cabbage, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/4 cup peanuts, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated


Instructions

  1. In a large bowl, combine the chickpeas, bell pepper, cucumber, carrots, red cabbage, cilantro, green onions, and peanuts.
  2. In a small bowl, whisk together lime juice, soy sauce, sesame oil, honey, and ginger.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill for 30 minutes before serving to enhance flavors.
