  • ½ cup cilantro, chopped (optional)
  • 1 cup crispy chow mein noodles or crushed ramen noodles
  • ¼ cup sliced almonds or cashews
  • 1 tablespoon sesame seeds (optional)
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 garlic clove, minced
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste

Instructions

  1. In a small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey (or maple syrup), olive oil, garlic, ginger, salt, and pepper. Set aside.
  2. In a large bowl, combine shredded chicken, cabbage, carrots, bell pepper, green onions, and cilantro.
  3. Pour the dressing over the salad and toss until all ingredients are well coated.
  4. Just before serving, sprinkle with crispy noodles, nuts, and sesame seeds.
