- 3 pounds beef chuck roast
- 1/2 cup honey
- 1/2 cup balsamic vinegar
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- 1 large onion, sliced
- 4 cups carrots, cut into chunks
Instructions
- In a bowl, mix together honey, balsamic vinegar, garlic, salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Place sliced onion and carrots in the bottom of the crockpot.
- Put the seared beef on top of the vegetables, then pour the honey balsamic mixture over the roast.
- Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
- Remove the roast and let it rest before slicing. Serve with the veggies and sauce.
Notes
- For added flavor, marinate the beef in the honey balsamic mixture overnight.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
