Description

This Crockpot Honey Balsamic Beef Chuck Roast is a simple yet delicious dish that combines the sweetness of honey and the tanginess of balsamic vinegar for a mouthwatering meal.


Ingredients

  • 3 pounds beef chuck roast
  • 1/2 cup honey
  • 1/2 cup balsamic vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 4 cups carrots, cut into chunks


Instructions

  1. In a bowl, mix together honey, balsamic vinegar, garlic, salt, pepper, and thyme.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast on all sides until browned.
  3. Place sliced onion and carrots in the bottom of the crockpot.
  4. Put the seared beef on top of the vegetables, then pour the honey balsamic mixture over the roast.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Remove the roast and let it rest before slicing. Serve with the veggies and sauce.

Notes

  • For added flavor, marinate the beef in the honey balsamic mixture overnight.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
