Ingredients

  • 3 pounds corned beef brisket
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 6 cups cabbage, chopped
  • 4 medium carrots, cut into chunks
  • 3 cups low-sodium beef broth
  • 2 tablespoons mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon allspice berries


Instructions

  1. Place the corned beef brisket in the crockpot.
  2. Add the chopped onion, minced garlic, and carrots around the meat.
  3. Sprinkle mustard seeds, black peppercorns, and allspice berries over the top.
  4. Pour the beef broth over the ingredients in the crockpot.
  5. Cover and cook on low for 8-10 hours or until the meat is tender.
  6. Add the chopped cabbage during the last hour of cooking.
  7. Once cooked, remove the corned beef and let it rest for a few minutes before slicing.
  8. Serve the sliced corned beef with vegetables.
