Ingredients

  • 1 pound chicken breasts
  • 2 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces gnocchi
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In the crockpot, add chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
  2. Cook on low for 6-7 hours or on high for 3-4 hours.
  3. Remove the chicken, shred it, and return it to the crockpot.
  4. Add gnocchi and heavy cream; stir to combine.
  5. Cook on high for an additional 30 minutes or until gnocchi are tender.

Notes

  • For a thicker soup, mix 1 tablespoon of cornstarch with cold water and stir into the soup.
