- 1 pound chicken breasts
- 2 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 16 ounces gnocchi
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 teaspoon oregano
- Salt to taste
- Black pepper to taste
Instructions
- In the crockpot, add chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, oregano, salt, and pepper.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Remove the chicken, shred it, and return it to the crockpot.
- Add gnocchi and heavy cream; stir to combine.
- Cook on high for an additional 30 minutes or until gnocchi are tender.
Notes
- For a thicker soup, mix 1 tablespoon of cornstarch with cold water and stir into the soup.
- Feel free to add spinach or kale for added nutrition.
