- 1 pound boneless, skinless chicken breasts
- 1 cup yellow onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons fresh parsley, chopped
Instructions
- In the slow cooker, add the chicken, onion, garlic, carrots, and celery.
- Pour in the chicken broth and add thyme, salt, and pepper.
- Cover and cook on low for 6-7 hours or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the slow cooker.
- Add the rice and cook for another 30 minutes until the rice is tender.
- Stir in the frozen peas and parsley before serving.
Notes
- For added flavor, you can sauté the onions and garlic before adding them to the crock pot.
- This soup can be made ahead of time and stored in the refrigerator.
