This comforting Crock Pot Chicken Rice Soup is an easy recipe perfect for any occasion.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In the slow cooker, add the chicken, onion, garlic, carrots, and celery.
  2. Pour in the chicken broth and add thyme, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Add the rice and cook for another 30 minutes until the rice is tender.
  6. Stir in the frozen peas and parsley before serving.

Notes

  • For added flavor, you can sauté the onions and garlic before adding them to the crock pot.
  • This soup can be made ahead of time and stored in the refrigerator.
