Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchini into thin rounds and place in a bowl.

- Beat the eggs in another bowl.
- Dip each zucchini slice into the egg, then into the breadcrumb mixture, ensuring it’s well coated.
- Arrange the coated zucchini on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown and crispy.
