Description

Delicious and crunchy Reuben bites served with a spicy and zesty homemade Thousand Island sauce.


Ingredients

  • 1 pound corned beef, diced
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons horseradish
  • 1 tablespoon hot sauce
  • 1 teaspoon garlic powder


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix the corned beef, sauerkraut, Swiss cheese, breadcrumbs, and beaten egg until combined.
  3. Form the mixture into small bite-sized balls or patties.
  4. Place the bites on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes or until golden brown and crispy.
  6. Meanwhile, prepare the zesty spicy Thousand Island sauce by mixing mayonnaise, ketchup, horseradish, hot sauce, and garlic powder in a separate bowl.
  7. Once the bites are done, serve hot with the sauce on the side.
