- 2 large eggplants, sliced
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups panko breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup feta cheese
- 1/2 cup cream cheese
- 2 tablespoons olive oil
- 1/4 cup hot honey
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up a breading station by placing flour in one bowl, beaten eggs in another, and panko breadcrumbs mixed with salt and pepper in a third.
- Dredge each eggplant slice in flour, dip into eggs, and then coat with panko breadcrumbs.
- Place the breaded eggplant slices on the prepared baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Meanwhile, in a blender or food processor, combine feta cheese and cream cheese until smooth.
- Once the eggplant is done, spread whipped feta on each slice and drizzle with hot honey before serving.
Notes
- For an extra kick, add red pepper flakes to the whipped feta.
- This dish can be served warm or at room temperature.
