Description

Crispy eggplant slices topped with whipped feta and drizzled with hot honey, creating an irresistible appetizer or side dish.


Ingredients

  • 2 large eggplants, sliced
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup feta cheese
  • 1/2 cup cream cheese
  • 2 tablespoons olive oil
  • 1/4 cup hot honey


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a breading station by placing flour in one bowl, beaten eggs in another, and panko breadcrumbs mixed with salt and pepper in a third.
  3. Dredge each eggplant slice in flour, dip into eggs, and then coat with panko breadcrumbs.
  4. Place the breaded eggplant slices on the prepared baking sheet and drizzle with olive oil.
  5. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Meanwhile, in a blender or food processor, combine feta cheese and cream cheese until smooth.
  7. Once the eggplant is done, spread whipped feta on each slice and drizzle with hot honey before serving.

Notes

  • For an extra kick, add red pepper flakes to the whipped feta.
