- 4 pieces chicken thighs
- 1 cup blackberries
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon cornstarch
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix together the blackberries, soy sauce, honey, olive oil, garlic, and ginger.
- Place the chicken thighs in a baking dish and pour the blackberry mixture over them.
- Bake for 25-30 minutes until the chicken is cooked through and crispy.
- In a small bowl, mix cornstarch with a little water and add to the pan juices to thicken.
- Serve the chicken drizzled with the sticky sauce.
Notes
- For extra crunch, broil the chicken for the last 5 minutes of cooking.
- Feel free to substitute blackberries with other berries if desired.
