- 1 cup shredded red cabbage

- 1 cup corn kernels

- 6 slices turkey bacon, cooked and crumbled
- ½ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large mixing bowl, combine the green cabbage, red cabbage, carrots, corn, cilantro, jalapeño, red bell pepper, green onions, and turkey bacon.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, chili powder, garlic powder, salt, and black pepper.
- Pour the dressing over the coleslaw and toss to combine evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled as a side dish or topping for tacos.
