Description

This Mexican Coleslaw is a vibrant and flavorful side dish that combines fresh vegetables with crispy turkey bacon.


Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup corn kernels
  • ½ cup chopped fresh cilantro
  • 1 jalapeño, finely chopped
  • ½ cup diced red bell pepper
  • ½ cup sliced green onions
  • 6 slices turkey bacon, cooked and crumbled
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, corn, cilantro, jalapeño, red bell pepper, green onions, and turkey bacon.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, chili powder, garlic powder, salt, and black pepper.
  3. Pour the dressing over the coleslaw and toss to combine evenly.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve chilled as a side dish or topping for tacos.

Notes

  • This coleslaw can be made a day in advance for better flavor.
