- 2 cups heavy cream
- 1 cup whole milk
- 1 cup granulated sugar
- 6 large egg yolks
- 1 tablespoon vanilla extract
- 1/4 cup brown sugar for topping
Instructions
- Preheat the oven to 325°F (163°C).
- In a saucepan, combine heavy cream, whole milk, and vanilla. Heat until just simmering.
- In a bowl, whisk together egg yolks and granulated sugar until pale.
- Temper the egg mixture by gradually adding hot cream mixture.
- Pour the mixture into ramekins and place them in a baking dish.
- Fill the baking dish with hot water until halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set but still jiggly in the center.
- Remove and cool to room temperature, then refrigerate for at least 4 hours.
- Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize until golden.
Notes
- Make sure the crème brûlée is well chilled before caramelizing the sugar.
- For a creative twist, try infusing the cream with coffee or citrus zest.
