- 2 fillets salmon
- 1 cup shrimp, peeled and deveined
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 4 servings mashed potatoes
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add the salmon fillets and cook for 4-5 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add shrimp and cook until pink. Remove and set aside.
- Pour in heavy cream, add cherry tomatoes, spinach, and red pepper flakes. Simmer until the sauce thickens.
- Return salmon and shrimp to the skillet, stir gently to combine.
- Serve over a bed of mashed potatoes.
Notes
- For extra flavor, add parmesan cheese to the sauce.
- Feel free to substitute spinach with kale if desired.
