Ingredients

  • 2 fillets salmon
  • 1 cup shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 4 servings mashed potatoes


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add the salmon fillets and cook for 4-5 minutes on each side until cooked through. Remove and set aside.
  3. In the same skillet, add shrimp and cook until pink. Remove and set aside.
  4. Pour in heavy cream, add cherry tomatoes, spinach, and red pepper flakes. Simmer until the sauce thickens.
  5. Return salmon and shrimp to the skillet, stir gently to combine.
  6. Serve over a bed of mashed potatoes.

Notes

  • For extra flavor, add parmesan cheese to the sauce.
  • Feel free to substitute spinach with kale if desired.
