Instructions
- Heat olive oil in a large pot over medium heat.

- In the same pot, add onions, garlic, carrots, and celery, sautéing until soft.
- Pour in the chicken broth and bring to a simmer.

- Reduce heat and stir in the heavy cream and spinach.
- Season with salt and pepper to taste.
- Simmer for an additional 5 minutes before serving.
