  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes.
  3. Remove the chicken and slice into bite-sized pieces.
  4. In the same pot, add onions, garlic, carrots, and celery, sautéing until soft.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the sliced chicken back into the pot and stir in the Italian seasoning.
  7. Reduce heat and stir in the heavy cream and spinach.
  8. Season with salt and pepper to taste.
  9. Simmer for an additional 5 minutes before serving.
