Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 3 cups spinach, fresh
  • 2 cups alfredo sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add shrimp and scallops, cooking until just opaque; about 3-4 minutes.
  4. In a large mixing bowl, combine ricotta cheese, spinach, and half of the mozzarella cheese.
  5. Spread a layer of alfredo sauce on the bottom of a lasagna dish.
  6. Layer 4 lasagna noodles over the sauce, followed by half of the seafood mixture and half of the ricotta mixture.
  7. Repeat the layering process, ending with a layer of noodles topped with remaining alfredo sauce and cheeses.
  8. Bake in the preheated oven for 30-35 minutes until bubbly and golden.
  9. Let it rest for 10 minutes before serving.
