- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 3 cups spinach, fresh
- 2 cups alfredo sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add shrimp and scallops, cooking until just opaque; about 3-4 minutes.
- In a large mixing bowl, combine ricotta cheese, spinach, and half of the mozzarella cheese.
- Spread a layer of alfredo sauce on the bottom of a lasagna dish.
- Layer 4 lasagna noodles over the sauce, followed by half of the seafood mixture and half of the ricotta mixture.
- Repeat the layering process, ending with a layer of noodles topped with remaining alfredo sauce and cheeses.
- Bake in the preheated oven for 30-35 minutes until bubbly and golden.
- Let it rest for 10 minutes before serving.

- For a healthier option, you can use whole grain lasagna noodles.
