- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1 teaspoon garlic, minced
- 1/2 cup cream cheese
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add mushrooms and cook until golden brown.
- Add spinach and garlic, cooking until spinach is wilted.
- Stir in cream cheese and parmesan, mixing until smooth and creamy.
- Once sweet potatoes are done, cut them in half and scoop out some flesh.
- Mix the sweet potato flesh with the creamy mushroom spinach mixture.
- Stuff the sweet potato skins with the mixture and return to the oven for an additional 10 minutes.
- Remove from the oven, season with salt and pepper, and serve.
Notes
- For added flavor, consider topping with extra cheese before baking.
- You can also add cooked chicken or turkey for extra protein.
