Description

A delightful and hearty recipe made with sweet potatoes, creamy mushrooms, and fresh spinach.


Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1 teaspoon garlic, minced
  • 1/2 cup cream cheese
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes and poke holes in them with a fork. Bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Add mushrooms and cook until golden brown.
  4. Add spinach and garlic, cooking until spinach is wilted.
  5. Stir in cream cheese and parmesan, mixing until smooth and creamy.
  6. Once sweet potatoes are done, cut them in half and scoop out some flesh.
  7. Mix the sweet potato flesh with the creamy mushroom spinach mixture.
  8. Stuff the sweet potato skins with the mixture and return to the oven for an additional 10 minutes.
  9. Remove from the oven, season with salt and pepper, and serve.

Notes

  • For added flavor, consider topping with extra cheese before baking.
  • You can also add cooked chicken or turkey for extra protein.
