- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- In a large pot, cook turkey bacon until crispy. Remove and set aside.
- In the same pot, melt butter and sauté onion until translucent.
- Add garlic and cook for an additional minute.
- Stir in broccoli and chicken broth; bring to a boil. Reduce heat and simmer until broccoli is tender.
- Use an immersion blender to puree soup until smooth.
- Stir in heavy cream, cheese, salt, pepper, and nutmeg. Cook until cheese is melted.
- Serve hot, garnished with crumbled turkey bacon.
Notes
- For added flavor, use sharp cheddar cheese.
- You can substitute the turkey bacon with regular bacon if desired.
