- Salt & pepper, to taste
- 1 tsp paprika
- 1 tbsp olive oil (for searing)
- 2 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Optional: chopped parsley or thyme for garnish
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil (for roasting)
- 1 tsp garlic powder
- 1 tsp dried rosemary or thyme
Instructions
- Preheat oven to 425°F (220°C).
- Toss halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread on a baking sheet. Roast 25–30 minutes, flipping halfway.
- Season chicken with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high. Sear chicken 4–5 minutes per side until golden and cooked through. Remove from skillet.
- Reduce heat to medium. Add butter and garlic to skillet. Sauté 1–2 minutes until fragrant.
- Add chicken broth, scraping up brown bits. Stir in heavy cream, Parmesan, and Italian seasoning. Simmer 3–5 minutes until slightly thickened.
- Return chicken to skillet, spoon sauce over, and simmer 3–4 minutes more to blend flavors.
- Serve with roasted potatoes and garnish with fresh herbs if desired.
