- 2 chicken breasts, thinly sliced
- 12 oz fettuccine pasta
- 4 garlic cloves, minced
- 2 tbsp olive oil or butter
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup broccoli florets, steamed
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the fettuccine in salted water until al dente. Reserve ½ cup pasta water. Drain and set aside.
- Season chicken with salt, pepper, and Italian seasoning.
- Heat oil in a skillet and cook chicken until golden and cooked through. Set aside.
- In the same pan, sauté garlic in butter until fragrant. Add heavy cream and simmer.
- Stir in Parmesan cheese until smooth. Add pasta water if needed to thin the sauce.
- Add pasta, chicken, and broccoli into the sauce. Toss until evenly coated.
- Garnish with parsley and serve immediately.
Notes
- Use rotisserie chicken for a shortcut.
- Add mushrooms or spinach for variety.
- Freshly grated Parmesan gives the best texture.
