Creamy Garlic Butter Salmon with Spinach & Mushrooms is a one-pan dish that’s rich, flavorful, and easy to make in just 30 minutes. Perfect for weeknights or special occasions, this recipe features tender seared salmon in a velvety garlic cream sauce with mushrooms and spinach.


Ingredients

  • 4 salmon fillets (6 oz each)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 tsp paprika
  • Juice of 1/2 lemon (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat salmon dry and season both sides with salt and pepper.
  2. Heat olive oil in skillet over medium-high heat. Sear salmon skin-side down for 4–5 minutes, flip and cook 2–3 minutes more. Remove and set aside.
  3. Reduce heat to medium. Melt butter, then add garlic and sauté for 30 seconds.
  4. Add mushrooms, cook 4–5 minutes until browned.
  5. Stir in heavy cream, chicken broth, and paprika. Simmer 2–3 minutes until slightly thickened.
  6. Stir in spinach and cook until wilted. Add lemon juice if using.
  7. Return salmon to pan, spoon sauce over, and simmer for 1–2 minutes.
  8. Garnish with parsley and serve hot.
