Description

These Cheesecake-Filled Chocolate Chip Cookies feature a soft, golden cookie shell wrapped around a creamy, tangy cheesecake center—perfect for parties, holidays, or a cozy baking day.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups semisweet chocolate chips
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract (for filling)
  • 1 tbsp all-purpose flour (for filling)

Instructions

  1. In a bowl, beat cream cheese, powdered sugar, vanilla extract, and flour until smooth.
  2. Scoop into 1-tbsp balls and freeze for 30 minutes.
  3. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Cream together butter, brown sugar, and granulated sugar until fluffy.
  6. Add egg and vanilla extract to the butter mixture and mix until combined.
  7. Gradually mix in the dry ingredients, then fold in chocolate chips.
  8. Take a tablespoon of dough, flatten it, place frozen cheesecake ball in the center, wrap and seal.
  9. Roll into a ball and place on the prepared baking sheet.
  10. Bake for 10–12 minutes until edges are golden and center looks set.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Freeze cheesecake filling completely to make assembling easier.
  • Don’t overbake—cookies should look slightly soft in the center when removed.
  • Chill dough if it becomes too sticky to handle.
  • You can prepare the filling up to 1 month in advance and freeze it.
