Description

A delicious and comforting creamy cottage cheese chicken casserole with mushrooms and spinach.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cottage cheese
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cottage cheese, spinach, mushrooms, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
  3. In a medium skillet, heat the olive oil over medium heat and sauté the mixture for about 5 minutes, until heated through.
  4. Transfer the mixture to a greased casserole dish.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
