- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 6 cups chicken broth
- 1 cup wild rice, rinsed
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- salt to taste
- pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add the garlic and thyme, cooking for an additional minute.
- Pour in the chicken broth and bring to a simmer.
- Add the wild rice and cook according to package instructions, usually about 45 minutes.
- Once the rice is cooked, stir in the shredded chicken and heavy cream. Season with salt and pepper to taste.
- Simmer for another 10 minutes to heat through and meld flavors.
- Serve warm and enjoy!
Notes
- For extra flavor, consider adding a splash of lemon juice before serving.
