Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 6 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add the garlic and thyme, cooking for an additional minute.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the wild rice and cook according to package instructions, usually about 45 minutes.
  5. Once the rice is cooked, stir in the shredded chicken and heavy cream. Season with salt and pepper to taste.
  6. Simmer for another 10 minutes to heat through and meld flavors.
  7. Serve warm and enjoy!
