  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp smoked paprika (optional)
  • 1/4 tsp cayenne pepper (optional)
  • 12 oz spaghetti
  • Salt for pasta water
  • Chopped fresh parsley or green onions for garnish

Instructions

  1. Bring a large pot of salted water to boil. Cook spaghetti to al dente, drain, and set aside.
  2. Season chicken pieces with Cajun seasoning.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Remove and set aside.
  4. In the same skillet, melt butter. Sauté garlic for 1 minute.
  5. Add heavy cream, bring to a gentle simmer, and stir in mozzarella and Parmesan until melted.
  6. Season sauce with salt, pepper, smoked paprika, and cayenne (if using).
  7. Return chicken to skillet and toss with cooked spaghetti until well coated.
  8. Garnish with parsley or green onions and serve immediately.
