- 1 pound ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 2 cups cooked rice
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheese
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and cook ground beef until browned.
- Add black beans, corn, diced tomatoes, cooked rice, and taco seasoning. Stir until combined.
- Spread the mixture evenly in a greased baking dish.
- In a bowl, mix the sour cream and half of the cheese together.
- Spread the sour cream mixture over the beef mixture.
- Top with the remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- Feel free to add jalapeños for extra heat.
- Top with avocado and cilantro for fresh flavor.
