Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 2 cups cooked rice
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 tablespoon olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and cook ground beef until browned.
  3. Add black beans, corn, diced tomatoes, cooked rice, and taco seasoning. Stir until combined.
  4. Spread the mixture evenly in a greased baking dish.
  5. In a bowl, mix the sour cream and half of the cheese together.
  6. Spread the sour cream mixture over the beef mixture.
  7. Top with the remaining cheese.
  8. Bake for 25-30 minutes until bubbly and golden.
