Ingredients

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup rice, uncooked
- 1 packet taco seasoning
- 2 cups salsa
- 1 cup sour cream
- 2 cups shredded cheese
- 6 tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned.
- Add black beans, corn, rice, taco seasoning, and salsa. Stir to combine and cook for 5 minutes.
- In a greased baking dish, layer half of the tortilla strips, followed by half of the beef mixture, half of the sour cream, and half of the cheese.
- Repeat the layers, finishing with cheese on top.
- Bake for 25-30 minutes or until heated through and cheese is bubbly.
Notes
- For a vegetarian option, substitute ground beef with lentils or mushrooms.
- This dish can be made ahead of time and stored in the refrigerator before baking.
