Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup rice, uncooked
  • 1 packet taco seasoning
  • 2 cups salsa
  • 1 cup sour cream
  • 2 cups shredded cheese
  • 6 tortillas, cut into strips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned.
  3. Add black beans, corn, rice, taco seasoning, and salsa. Stir to combine and cook for 5 minutes.
  4. In a greased baking dish, layer half of the tortilla strips, followed by half of the beef mixture, half of the sour cream, and half of the cheese.
  5. Repeat the layers, finishing with cheese on top.
  6. Bake for 25-30 minutes or until heated through and cheese is bubbly.
